Material

For the potato filling

  • Potatoes – 3 (boiled)
  • Ghee – for frying
  • Rock salt – as per taste
  • Red chilli powder – 1/2 tsp
  • Ginger – 1/2 tsp (finely chopped)

To make dosa

  • Buckwheat flour – 5 tablespoons
  • Arbi – 2 tbsp (boiled)
  • Rock salt – as per taste
  • Ajwain – 1/2 tsp
  • Red chilli powder – 1/2 tsp
  • Ginger – 1 tsp (finely chopped)
  • Green chilli – 1 tsp (chopped)
  • Ghee – for frying

Method of making Buckwheat Dosa

  • Prepare the potato filling
  • First of all heat ghee in a pan.
  • Add mashed boiled potatoes into it.
  • Now add rock salt, red chilli and ginger and mix well.
  • Stir the mixture for a few minutes until it turns light brown.
  • Once the filling is ready, keep it aside.
  • Prepare the dosa batter

  • Mash the boiled arbi in a bowl.
  • Add buckwheat flour and rock salt and mix.
  • Now prepare the solution by adding water little by little.
  • Add celery, red chilli powder, ginger and green chillies and mix again.
  • While stirring the batter continuously in one direction, add enough water to make it smooth and flowable.
  • Cooking the Dosa

  • Heat a pan and apply some ghee on it.
  • Pour a spoonful of the batter and spread it in a circular shape.
  • Cook it for some time and apply ghee on the edges so that it becomes crispy.
  • Now turn the dosa and fry it well from the other side also.
  • Place the potato filling in the middle and fold the dosa.
  • Serving

    • Take out the hot buckwheat dosa in a plate.
    • Serve it with coconut chutney.
